Valpolicella RIPASSO 2011 and ROCCHETTO IGT 2007.

VALPOLICELLA SUP. RIPASSO 2011 84/100 REALLY GOOD
Slightly spicy aroma of dried red and black berries and cherries and coffee grounds with hints of fried herbs and floral and very delicate chocolate notes. Quiet, partly canned and dried acting, something covered fruit, vegetable and slightly woody notes, slightly soft tannins, buttery traces, fairly persistent. Smoky and sooty notes in the background, vegetal notes, also in covered alcohol warm finish and quite dry.
Rocchetto IGT 2007 corvina 100% 85/100 Excellent
Bouquet of complex herbs, and dried-greasy vegetal scent of dried cherries and predominantly dark berries, peppery aromas, some tobacco and dried peppers. Ripened fruit on the palate noticeable, brittle wood and soft tannins, hint of tobacco notes, grilled peppers and light earthy tones, fairly persistent and force.Long smooth finish.

DELESTAGE.
Delestage is a two-step “rack-and-return” process in which fermenting red wine juice is separated from the grape solids by racking and then returned to the fermenting vat to re-soak the solids. This step is then repeated daily.
During delestage racking, the cap slowly falls to the bottom of the vat while the wine is allowed to drain completely under the weight of the grape solids. Once the wine is completely racked, a portion of the grape seeds is removed to avoid imparting the harsh tannins in seeds to the wine.
